This cheesy vegan queso dip is a great alternative to regular queso. It is popular with kids and adults alike, and you can feel good about feeding vegan queso to your peeps. It is completely dairy free and gets it’s cheesy flavor from Brewers yeast or nutritional yeast.

This is not the yeast you make bread with but is grown from the yeast  Saccharomyces cerevisiae and is the inactivated form of the yeast. It is a great source of B vitamins, minerals and proteins. It is commonly thought that nutritional yeast contains vitamin B12 and vegans can get this vitamin which is deficient in a vegan diet. Unfortunately, there is no vegan source of Vitamin B12 because only eukaryotes synthesize this vitamin. Since yeast is a prokaryote it is not able to make B12. Some commercially sold nutritional yeasts have B12 in them because the supplement form is added to the powder after the yeast has grown. But since it is hard to know the manufacturing processes of the B12 supplement that is added, it is not suggested to rely on nutritional yeast for your B12 needs.

Ingredients:

1 cup cashews, soaked in water overnight

1 red bell pepper, diced

1/2 sweet yellow onion, diced

1 cup nutritional yeast

1 t salt (optional, adults only)

Steps:

  1. Saute onion till soft and slightly caramelized
  2. Add red pepper and cook till soft with the onion
  3. Drain water from cashews and puree in food processor with onions, red pepper, salt and yeast. Add a tiny bit of water if needed to reach desired consistency.
